Sfougato of Chios
4-5 eggs, finely chopped onion, fresh mint, salt, pepper, 3 tablespoons flour, shredded cheese and 1 slice of dried bread crushed into breadcrumbs
In a bowl, add the chopped onion, a pinch of salt, the mint, pepper, flour, breadcrumbs and cheese. Mix thoroughly. In a saucepan, add the mixture and beaten eggs to hot olive oil. Over medium heat, carefully brown and cook the mixture, remembering to turn it over so as to cook both sides evenly. When done, remove from heat and let sit until all excess water and juices are gone.
