Pasta Dish or Koufota
For the dough: wheat flour, olive oil
For the sauce: ground beef, cheese, onion, garlic, spices, cinnamon and carnation
Combining the flour, olive oil and hot water, begin kneading the dough. Once the dough thickens, we move on the so-called “hollowing”. Mold the dough into large stick-like sections, after which we then cut them into smaller pieces. Then we flour each piece in the traditional manner and motion, one you will learn from the locals of Psara. Next, we let the floured dough pieces boil for about 20 minutes. Then add the meat sauce (which we have already prepared using the above ingredients) and serve with cheese.
