Pasta in Lobster Sauce is also popular in Psara & Fourni islands
2 small or medium-sized lobsters
1 packet of spaghetti (or linguine)
½ cup olive oil
1 clove garlic
500 grams tomatoes, finely chopped
1 tablespoon balsamic vinegar
1 pinch of sugar
1 teaspoon tomato paste
1 pinch of basil
Boil lobsters and then strain the broth. After stir-frying the garlic, add all the remaining ingredients and let it boil until the mixture nicely comes together.
Remove the lobsters, after they have boiled, and add your pasta to the same water, adding a pinch of salt and a little olive oil. After the pasta is fully cooked, strain and place in a large platter. Pour your sauce over the spaghetti and place the lobsters on top (you may want to heat them up a little first). Finally, use the basil as a garnish and to add some color to your dish.
