Сфугато Митилини

Sfougato of Mytilene (similar to sfougato of Chios but with different recipe)



1 ½ kilograms of shredded zucchini
½ cup olive oil
70 grams butter milk
300 grams shredded gruyere cheese & 500 grams crumbled feta cheese
Handful of finely chopped parsley
6 eggs & 2 tablespoons flour
125 grams heavy cream or evaporated milk
½ teaspoon freshly-ground black pepper
Pinch of salt, 2 tablespoons bread crumbs


After shredding our zucchini (grater), lightly salt it and let it drain thoroughly.  In a large bowl, mix together the zucchini, the 2 cheeses, flour, pepper and parsley.  After beating the 5 eggs together with the cream or evaporated milk, add to the other ingredients in the bowl and mix together thoroughly.  In a large pan, add olive oil to the base and then the bread crumbs.  Add melted butter or margarine and again some olive oil on top of the bread crumbs.  Before adding the mixture, add the 6th beaten egg.  Pour the mixture in the pan and even it out, from end to end.  Add some water and bake in 180 degree C oven for 50 minutes.
