Bourekia
Bourekia are similar to tambouro keftedes of Chios
Ingredients
1 medium-sized pumpkin
2 large onions, finely chopped and stir-fried in olive oil
2 tablespoons of cinnamon, salt, pepper
2-3 tablespoons sugar
1-2 cups of feta cheese, crumbled
1 package of fillo dough sheets or 1 package homemade puff pastry

Directions
• Clean and chop the pumpkin into several large pieces and add to boiling, salted water; boil until pieces are soft. It is also possible to bake the pumpkin; do not peel, slice in half with a large cutting knife, remove the seeds. Bake at 180-200 degrees C.
• Remove from water and dry off the pumpkin, and using a spoon, take out the meat of the pumpkin and let it drain thoroughly.
• Once the pumpkin is thoroughly drained, mix all the ingredients together. Take a small taste to see if it is salty enough; add as needed.
• With the fillo dough or puff pastry, roll out and cut into long and wide pieces
• Place a serving of the mixture into one end of our dough, and wrap each piece in a rolling form, until it takes on a swirl-like shape
• The final step is to place our swirl-shaped pieces into a large pan. Bake at 200 degrees C until they get red.
• These delicious treats can be served with a sprinkle of grated cheese or sugar
