Rooster with “Flomaria” in Red Sauce
This delicacy is among the most traditional and popular on the island.
Ingredients
1 plucked, well-cleaned rooster, cut into parts
4 cups of “Flomaria” noodles
4-5 tomatoes
2 bay leaves
2 finely chopped onions
½ teaspoon sugar, pinch of oregano, salt, pepper
Directions:
We chop up the rooster into pieces and wash thoroughly, let dry. Boil water in a small pot, and then pour the hot water in a bowl. Add the tomatoes to the water and wait for them to turn warm. Once warm enough, remove the peels and pass them through the shredder/grater. With the remaining olive oil, begin sautéing the onions and follow that by adding the rooster parts. Maintain that the meat is browned all around. We now add some white wine to cool off the simmering mixture; wait a few minutes for the alcohol to evaporate. Then continue by adding the tomatoes, garlic, bay leaves, salt, pepper, oregano and ample hot water.
After you mix well, over low heat, let it cook for 45 minutes.
While the mixture cooks, boil the flomaria noodles, adding any of the remaining olive oil. Our dish is now ready to be served and enjoyed!
Note: It is not necessary to boil the noodles separately. If you wish to cook the noodles with the rooster and vegetables, just add them to the pot when the meat is about halfway done.
